INGREDIENTS
1 rotisserie chicken
2 cups purple grapes, quartered or halved
2-4 celery stalks, finely chopped
dollup of mayonnaise
salt and pepper
Remove the meat from the rotisserie chicken, discarding skin, and cut into small pieces. Add grapes & celery. Stir in mayonnaise until reaching the desired consistency. Salt and pepper to taste. Serve on toasted whole wheat bread with a slice of heirloom tomato and freshly ground pepper. Optional: add chopped pecans.
